Whew! It’s been a while since I’ve managed to get a Lunch Logic post up for you. Forgive me; the end of the school year and the beginning of summer have been busier than I would have guessed. The good news is, we’re still cooking and eating and planning and doing things the way we ordinarily would. The bad news is, I’ve barely had a minute to share any of it with you!
At any rate, here we are tonight, in the last week of June, and tonight’s Lunch Logic is really about sauces. There are two good, versatile sauces in the meal plan, and if you’re anything like me, you’ll end up with extras of them every time you make them. So why not use the leftovers to make creative lunches? There are plenty of things you can make with marinara or pesto. Give some of these a try.

Sunday, 6/23: Sunday roast chicken dinner
Monday, 6/24: Buffalo-inspired lettuce wraps, fruit
Tuesday, 6/25: Sesame noodles with shredded chicken and vegetables
Wednesday, 6/26: Grilled sourdough pizzas, salad
Make it GF: Make pizza burgers instead! Top your burgers with sauce, mozzarella, and all your favorite pizza fixings and serve without buns.
Thursday, 6/27: Chicken with spinach pesto, crispy potatoes, vegetables
Friday, 6/28: Fend night

Those sound DELISH. I always try to make extra or double of things that I can use in different ways throughout the week. Saves me time and money, and stress!
I absolutely recommend that people cook extras of things when they are in the kitchen — that way, when you don’t feel like being in the kitchen, you have something to fall back on!
You’re inspiring me to think outside of 1 time only meals! My goal this week will be to reuse something for a lunch or second dinner 🙂
